This matcha is a special delicacy made from rare tencha tea from Kakegawa that has been certified organic (JAS organic certification), and is carefully ground in a stone mill.
It has a rich aroma and clear flavor, with a gentle, lingering, subtle bitterness.
<Specially selected tea leaves and manufacturing methods>
The tea leaves used in this product are "tencha" tea leaves that have been grown without pesticides or chemical fertilizers (organic) for approximately 30 years on a farm with extensive knowledge, experience, and skilled techniques, and that are limited to harvesting only the first flush of tea.
"Tencha" is a type of Japanese tea and the tea leaves that are used to make matcha.
If you cover the new shoots with cheesecloth (black cloth) and cultivate them for about three weeks, avoiding strong sunlight, the chlorophyll will increase and the tea will turn a soft, vibrant green.
In addition, the bitterness is reduced and the sweetness and umami are enhanced.
You will notice that the color of the tea leaves is a deep green compared to regular tea leaves.
The cheesecloth is removed by hand one by one.
