At chittö , we purchase only the finest Kakegawa tea produced in Kakegawa City, Shizuoka Prefecture, a famous tea-producing region in Japan, directly from the producers, and offer it with the producers' thoughts.

Kakegawa tea, grown in an area blessed with abundant water and a warm climate, is a fine tea that has won numerous awards. Sencha is made using the "deep steaming method," which involves steaming the tea leaves for a longer period of time than usual, and is characterized by a rich, sweet, and deep flavor with reduced bitterness and odor.

Solid quality backed by tradition and SDGs

Kakegawa tea production began during the Azuchi-Momoyama period.
In the Edo period, the production of Japanese tea began in earnest, and there is an anecdote that the castle lord at the time, Yamauchi Kazutoyo, treated Tokugawa Ieyasu to Kakegawa tea.

During the period of rapid economic growth in the 1950s, the taste of Kakegawa tea was greatly improved with the establishment of the "deep steaming method," and Kakegawa tea made great progress. Currently, Kakegawa tea accounts for about 10% of the production in Shizuoka Prefecture, a tea-producing region that produces about 50% of Japanese tea.

In 2013, Shizuoka's Tea Grass Farming Method was recognized as a Globally Important Agricultural Heritage System.
This "Chagusaba farming method" is a farming method that not only produces high-quality tea but also contributes to the conservation of rich biodiversity, and is an important traditional agricultural method that should be passed on to the next generation.

Currently, over 30 tea farmers are registered as certified practitioners in Kakegawa City, and they are actively focusing on sustainable Japanese tea production that not only keeps quality and productivity in mind, but also environmental considerations.

While high-quality Japanese tea is produced, there are also concerns that producers face.
The issues vary, including a lack of successors, the aging of producers, and responding to climate change.
